The cast also includes British actor Harris Dickinson, known for his role in Babygirl, who will portray John Lennon, and Joseph Quinn, who stars in Netflix's Stranger Things, will play George Harrison.
Speaking at the CinemaCon convention in Las Vegas on Monday, which the cast attended, Sir Sam described the films as the "first binge-able theatrical experience".
"I've been trying to make a story about The Beatles for years," he added.
It was previously announced that Sir Sam will produce the films under his Neal Street Productions banner, alongside co-founder Dame Pippa Harris, the former chairwoman of Bafta, and Julie Pastor, reports the Mirror.
The project represents a historic moment as it's the first occasion Apple Corps Ltd and The Beatles – Sir Paul, Sir Ringo, and the families of Lennon and Harrison – have given their blessing for full life story and music rights to be used in a scripted film.
Sir Ringo previously appeared to let slip that Saltburn star Keoghan had taken on the role, when he mentioned to Entertainment Tonight: "I believe he's somewhere taking drum lessons, and I hope not too many."
During the promotion of his second Roman saga Gladiator II last year, Sir Ridley Scott let slip that Mescal was on board for the Beatles film, announcing at an industry event that the actor was "actually stacked up, doing the Beatles next" which might prevent him from participating in Scott's upcoming movie.
There have been several portrayals of the Beatles in film before, such as Nowhere Boy, which focused on Lennon's youth in Liverpool with Aaron Taylor-Johnson in the lead role.
The BBC drama Lennon Naked featured Christopher Eccleston, known for Doctor Who, as Lennon, while Chapter 27 brought to screen the tragic end of the musician in New York in 1980, with Jared Leto of Dallas Buyers Club fame portraying his assassin, Mark David Chapman.
Since their formation in 1960, The Beatles have become the best-selling musical act in history and remain one of the most impactful bands globally, boasting 18 UK number one singles and 16 UK number one albums.
Mescal and Keoghan are both Oscar nominees, for their roles in the drama Aftersun (Mescal) and black comedy The Banshees Of Inisherin (Keoghan).
Dickinson has also showcased his acting prowess in the comedy Triangle Of Sadness and thriller Where The Crawdads Sing, while Quinn gained popularity through Stranger Things before taking on roles including in A Quiet Place: Day One.
